Louisiana Sausage
A spicy Cajun-style fresh pork sausage built on cayenne, garlic, thyme, and a generous handful of fresh onion.
Ingredients
- 5 lbs medium-ground pork butt
- 1 large onion, minced
- 4 cloves garlic, pressed
- 5 teaspoons salt
- 2 teaspoons cayenne
- 2 teaspoons black pepper
- 2 teaspoons thyme
- 1½ teaspoons chili pepper
- ½ teaspoon allspice
- 1 cup cold water
Instructions
- Combine all ingredients in a large bowl and mix well, working the seasonings and cold water evenly through the meat.
- Stuff into hog casing.
