Ingredients

  • 5 lbs medium-ground pork butt
  • 1 large onion, minced
  • 4 cloves garlic, pressed
  • 5 teaspoons salt
  • 2 teaspoons cayenne
  • 2 teaspoons black pepper
  • 2 teaspoons thyme
  • 1½ teaspoons chili pepper
  • ½ teaspoon allspice
  • 1 cup cold water

Instructions

  1. Combine all ingredients in a large bowl and mix well, working the seasonings and cold water evenly through the meat.
  2. Stuff into hog casing.
