A Portuguese-style smoked pork sausage with paprika, garlic, and red wine — coarse, savory, and a touch sweet from the wine and brown sugar.

Ingredients

  • 5 lbs pork butt, coarsely ground
  • 2 tablespoons minced garlic
  • ½ cup red wine
  • 2 tablespoons liquid smoke
  • 3 tablespoons paprika
  • 5 teaspoons salt
  • 2 teaspoons cayenne pepper
  • 2 teaspoons freshly ground white pepper
  • 2 teaspoons dried oregano
  • 1 teaspoon freshly ground black pepper
  • ½ tablespoon sugar

Instructions

  1. Combine all ingredients in a large bowl and mix well, working the seasonings, wine, and liquid smoke evenly through the meat.
  2. Stuff into hog casings.
