Linguica Sausage
A Portuguese-style smoked pork sausage with paprika, garlic, and red wine — coarse, savory, and a touch sweet from the wine and brown sugar.
Ingredients
- 5 lbs pork butt, coarsely ground
- 2 tablespoons minced garlic
- ½ cup red wine
- 2 tablespoons liquid smoke
- 3 tablespoons paprika
- 5 teaspoons salt
- 2 teaspoons cayenne pepper
- 2 teaspoons freshly ground white pepper
- 2 teaspoons dried oregano
- 1 teaspoon freshly ground black pepper
- ½ tablespoon sugar
Instructions
- Combine all ingredients in a large bowl and mix well, working the seasonings, wine, and liquid smoke evenly through the meat.
- Stuff into hog casings.
