Ingredients

  • 10 large eggs
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 4 cups shredded Monterey Jack cheese
  • 2 cups 4% cottage cheese
  • 1 can (4 oz) chopped green chiles

Instructions

  1. Preheat the oven to 350°F and grease a 13×9-inch baking dish.
  2. In a large bowl, beat the eggs on medium-high speed for 3 minutes, until light and lemon-colored.
  3. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the eggs and mix well.
  4. Stir in the Monterey Jack, cottage cheese, and green chiles.
  5. Pour into the prepared baking dish and bake, uncovered, for 35–40 minutes, or until a knife inserted in the center comes out clean.
  6. Let stand 5 minutes before cutting and serving.
