Green Chile Egg Puff
A cheesy, custardy baked egg dish with a gentle chile kick — easy enough for a weekday breakfast and generous enough to feed a crowd.
Ingredients
- 10 large eggs
- ½ cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 4 cups shredded Monterey Jack cheese
- 2 cups 4% cottage cheese
- 1 can (4 oz) chopped green chiles
Instructions
- Preheat the oven to 350°F and grease a 13×9-inch baking dish.
- In a large bowl, beat the eggs on medium-high speed for 3 minutes, until light and lemon-colored.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the eggs and mix well.
- Stir in the Monterey Jack, cottage cheese, and green chiles.
- Pour into the prepared baking dish and bake, uncovered, for 35–40 minutes, or until a knife inserted in the center comes out clean.
- Let stand 5 minutes before cutting and serving.
